Given the growing interest in diabetic ice cream on the Georgian market, we decided to take a closer look at how Paloma diabetic ice cream is made - its ingredients, production standards, and real benefits.

We present an interview with Milena Esaibekyan, Paloma’s ice cream technologist.
What is the basis of diabetic ice cream? Which type of milk is used, and what replaces sugar?
Diabetic ice cream is made according to a special recipe that does not contain regular sugar and minimizes the impact on blood glucose levels. Its creamy texture comes from skimmed milk, which is a source of protein but does not increase the fat content of the product. This is particularly important for people with diabetes, as skimmed milk does not burden metabolism or trigger insulin spikes the way full-fat dairy products can.
To achieve a sweet taste, sugar is replaced with fructose. This natural sweetener is sweeter than sugar, so only a small amount is needed. Unlike chemical sweeteners, fructose does not leave a bitter or artificial aftertaste.
Is diabetic ice cream effective for a diet? Who is it recommended for?
Diabetic ice cream is low in calories and sugar-free, making it suitable for moderate consumption as part of a dietary or diabetic meal plan. It is recommended for those managing their weight, following a low-glycemic diet, or living with diabetes. Essentially, diabetic ice cream is a healthy alternative to traditional desserts - just remember to consume it in moderation as part of a balanced diet.
What kind of laboratory testing does diabetic ice cream undergo before and after production?
Paloma’s diabetic ice cream is made from high-quality European ingredients, which undergo microbiological and organoleptic laboratory testing before production. At the factory, each batch is checked both upon receipt and during production. The technological process, ice cream structure, and temperature are carefully monitored. The final product also undergoes microbiological and organoleptic analysis to ensure quality.
What flavors are available in Paloma diabetic ice cream?
Paloma offers two beloved flavors of diabetic ice cream: strawberry and chocolate. The strawberry flavor stands out for its light, natural fruity taste, while the chocolate version features the addition of natural cocoa.
